Southwestern Chicken Quinoa Salad



The What:
1 bell pepper, diced
1/2 red onion, diced
3 oz chopped baked chicken (seasoned with salt and pepper, garlic powder, olive oil)
1/4 cup Quinoa
0 calorie hot sauce
1/2 cup Corn/Black Bean/ tomato mixture. I like this kind: 


The How:

-Cook Quinoa according to package directions.
- Sauté pepper and onion until desired texture (I like my veggies a little crispy)
-Combine quinoa, cooled chicken, veggies, top with hot sauce.

Yum!
Serves: 1
